Creative Crepes

Crepes are so much lighter than pancakes- no arguing with that. But because of that, sometimes we end up eating more of them! They are so fun to make and eat fresh off the fire! Here is a creative way to make them, especially for a family brunch on a Sunday morning.

Makes 4

Ingredients: 

4 crepes (get a great simple recipe here)

4 eggs

8 slices of prosciutto

salt and pepper

finely chopped parsley or chives

Procedure:

  1. Preheat oven to 350 degrees.

  2. Place 4 crepes on a rimmed baking sheet.

  3. Place 2 slices prosciutto on each crepe.

  4. Crack 1 egg into center of each; fold edges toward center. Season with salt and pepper.

  5. Bake until egg white is set and yolk is still runny, 12 minutes. Top with parsley or chives.
